Blueberry Probiotic Smoothie

Contains: honey, milk

Always hate scrolling through a lot for a recipe. Ingredients and recipe first, then the rest!


Ingredients

  • 2 cups blueberry kefir

  • ½ tablespoon Manuka honey

  • 1 - 1 ½ cups frozen blueberries

  • Optional: 1 scoop vanilla ice cream or frozen yogurt

Directions

  1. Put kefir in a blender and add honey. It's important to put the honey in first so that it will mix evenly and you don't get chunks of honey!

  2. lPulse a few times

  3. Add frozen blueberries and blend thoroughly

  4. If desired, add one scoop of ice cream or frozen yogurt at the end and blend

  5. Adjust amounts of kefir and blueberries to adjust thickness of smoothie

Now, the background and story…

I was diagnosed with gastroparesis in college and had a lot of difficulty with most solid foods - especially in the morning. I needed something that was easy to digest, delicious, and preferably had a lot of good things for my gut. I experimented with different smoothies for breakfast and this was my favorite that became a staple - my nutritionist even started giving it to her other patients!

When I developed dysphagia in 2016, this recipe became a staple again. I sometimes have to adjust the amounts of kefir and blueberries to accommodate my needs; even then it's still delicious! If I've had trouble getting enough calories, I'll add a scoop of vanilla ice cream to it at the end.
